Monday night dinner - fajitas on foccacio, 3 bean soup, apple upside cake

I started to make a chicken soup but decided to use the left over cooked chicken for lunch. I made a curried chicken salad for lunch so I switched gears for the soup. I made a 3 bean soup from left over beans from the veggie burgers I had made. I used black beans, navy beans, and chickpeas. I had previously soaked the beans overnight in homemade chicken broth to add flavor to the beans. I then cooked the beans in my pressure cooker for 20 minutes before I made the soup with my homemade chicken broth, crushed tomatoes, carrots, celery, onion, garlic, red wine, lime, seasonings.
As a side dish, I was going to make carmelized orange sweet potatoes but then I switched to a lemon chicken with a lemon angel hair pasta and peas as a side dish. I saw a red pepper in the refrigerator getting old so I decided on fajita's on pita however I decided on foccacio bread. So I mixed the flours and rose the dough (yeast and honey), rolled it out to make a flattened focaccio bread that I seasoned for the chicken fajitas, threw the sliced pepper in the pan, then little later added some thinly sliced onions, decided on what seasonings, mixed in some crushed tomatoes, cumin, lime, and other.
For dessert I made an upside down apple cake using Stayman Winesap apples sliced very thin topped with a thin orange butter sugar glaze.
Tomorrow's night dinner? Who knows. It has to be easy because I have to leave at 4:30pm to do MMA at his home gym with an instructor who called me tonight and needs a training partner for a few days to prep for a match. So maybe tomorrow night might be tuna fish? Maybe a hot tuna cheese casserole. I have a piece of mozzarella that needs to be used, some cheddar cheese, milk, onions, never did it before but that doesn't matter, the soup and upside apple cake I never did before, and the fajita's tonight, I've changed them around tonight for a different taste, and the foccacio bread was different than I usually make.
Dessert in the next day or two will probably be rice pudding.
And I'm losing weight. I'm the lowest I've been in 25 years.

Saturday night dinner I made - chicken marsala & rolls w. orange zest

Tonight I planned chicken marsala (mushrooms, garlic, and marsala wine, only buy the imported Italian marsala, there is a taste difference).
I felt like rolls so I raised some dough and made yeast rolls. I wanted to take them up a notch so I infused some sugar with orange zest. I put the rolls in silicon baking cups and let them rise in a small counter top convection oven. After rising, I brushed the tops with melted butter and then sprinkled on the sugar infused with orange zest.
The orange zest gave me an idea to use for the chicken marsala. After dipping the very thin sliced pieces of chicken in an egg/milk mixture, then I sprinkled on some garlic roasted bread crumbs, I then grated some orange zest on top. I thought the orange zest would take it up a notch and be a nice complement to the marsala wine. It was outstanding. You still had the mushroom garlic marsala sauce but the chicken had a slight flavor of garlic and orange.

Tonight I made chicken, dunked in egg/milk, bread crumbs and patted with toasted coconut, sauteed in olive oil and towards the end flambe with Malibu Rum. I baked orange sweet potatoes at 450 for 70 minutes, removed then mixed in some butter, toasted coconut, and flambe again with Malibu Rum. For a veggie, I sauteed asparagus in olive oil, towards the end I added a touch of balsamic vinegar then finished with some butter. And I still had left some of my coconut custard pie that I made yesterday.
Tomorrow night, I'm going out for pizza with a friend.

This is what I made for dinner tonight. It is nothing untypical for me except for the homemade dessert. I usually don't make desserts but I always eat very healthy.
Potato salad cooked in a pressure cooker using homemade chicken broth I made last night as the "water". The pressure cooker infuses the chicken broth into the potato. The vinegar element was from homemade dill pickles. I added hard boil eggs.
Quinoa salad, the oldest grain known to man, high in protein, complex carb, with carrots, onions, tomatoes, corn, toasted almond slivers, seasonings, vinaigrette.
Lentil soup with carrots, celery, onions, garlic, crushed tomatoes, and other.
Homemade veggie burger, navy beans, black beans, garbanzo beans aka chickpeas (is it a bean or is it a pea?), soaked overnight in homemade chicken broth then cooked in the pressure cooker, added some veggies to the burger, seasonings, seasoned bread crumbs from homemade bread, an egg to bind it together. Next time I'm eliminating the navy beans and will use brown rice, maybe add some tahini to the burger.
Maple flavored coconut custard pie for dessert. I toasted the flaked coconut, used milk and eggs of course to make the custard filling, added coconut milk to the milk for an added flavor kick, and then flavored the custard mixture with 100% pure maple syrup (isn't 100% the same as pure?). Prebaked the homemade pie crust before pouring it in. Refrigerated it for 4 hours before eating.
Tomorrow night's dinner? I don't know until tomorrow. My girlfriend Susan had taken out chicken breasts for tonight's dinner but I felt like potato salad, seldom eat potatoes other than french fries, and I've been wanting to make a coconut custard pie since the summer. In the summer I wanted to make a coconut layer cake but never got around to it. Maybe tomorrow I'll make chicken parm with a homemade tomato sauce, cheddar cheese topping, as I have eggplant that I want to use up. The next night I might make turkey burgers stuffed with mozzarella cheese and pesto aioli topping. Next week I have a hankering to make a think crust pizza on the bbq grill before it gets too cold.
