Monday night dinner - Curried shrimp in coconut wine tomato sauce with broccoli and pasta


Tonight I wasn't going to write about a recipe but decided to anyway. My girlfriend went out with some ladies from the gym for their hamburger night, though she had Caesar, another chicken parm, another antipasto, and the last had a blue burger, finally!

Tonight's dinner was very tasty, somewhat different, and easy to make.

Choose a pasta, linguine works well with this dish. I personally love linguine, hands down over spaghetti. Heavily salt the water and cook. If the pasta doesn't taste slightly salty, you didn't use enough. I use kosher salt because it's cheaper than table salt. If you've been following my blogs, I'd like to tell you I make my own salt by boiling sea water, but I don't. I buy it.

Buy some large shrimp. I only buy shrimp farm raised in the U.S. but prefer Gulf of Mexico or Atlantic or Pacific South American shrimp. I do not like any food product from China no matter where they were caught. I wouldn't feed Chinese products to my dog, my baby, or my (if I had a baby or ), why would I feed Chinese food products to me?

Peel the shrimp and slice the back of them. You must then devein the shrimp by removing that red vein that looks like a blood vessel BUT IT'S NOT!!! That's the intestine of the shrimp and it's filled with waste products aka feces. Then wash the shrimp after you've removed it.

Slice the broccoli very thin then steam the broccoli, put some olive oil, not EVOO, then when the broccoli is almost done put it in the pan with some sliced onions, then add some minced garlic, and curry and oregano. Make some room for the shrimp and add it and cook until almost done. Just a minute or two. If cooked too long, shrimp will become chewy. Go as light or heavy on the curry but lean towards heavy because you will lose it in the sauce ingredients. Add some white zinfandel wine, crushed tomatoes, and whatever amount of coconut milk you desire. You are making a sauce for the linguine, not creating a potful.

Just let everything sit and reduce until somewhat thick. Then plate the linguine and put the shrimp broccoli mixture over. Sprinkle on some parmesan cheese or grate a very sharp cheese. A sharp Greek cheese called kasseri works well with this dish.

I'm glad you enjoy it. I try to do something different, and with everything, when I can, I try to take it up a notch and make things better.
