Friday dinner-Veggie burger w lime mayo,Sweet Potato Carrot Coconut soup,Sweet potato carrot muffin


Tonight's dinner

I made sweet potato carrot muffins. I baked the sweet potatoes and then grated carrots, added half whole wheat flour half white flour, salt, baking powder & soda, white and brown sugar, vanilla, and cinnamon. These are probably my favorite muffins. They started out as sweet potato muffins and I keep changing it. Today for the first I added the finely grated carrots, split the flour between whole wheat and flour (next time I'll increase the whole wheat), and I split the sugar between white and brown (next time more brown, for those who don't know, brown sugar is white flour with molasses added to it, another sugar product).

I made a bisque of sweet potatoes, coconut milk, added carrots for the first time and curry powder. Very good and very healthy.

Then for the main meal, veggie burgers. I used my pressure cooker to cook the oatmeal, lentils, chickpeas, pinto beans, black beans, bulghur in chicken broth. After it was done, very very soft, I added some spices including curry powder!, tamari (a high quality soy sauce), an egg and some bread crumbs. Next time I might try matzoh. I cooked it in canola oil. Very good and very healthy. I made a lime mayo for the topping which was mayo, fresh squeezed lime juice, chili powder, and honey. All together it was very tasty. I didn't put it on a roll. I had intended to defrost a Portugese roll I bought the other day and make a garlic roll from it with garlic, butter, "baked" in a frying pan, but decided to keep that for next week and I'll make spaghetti and turkey meatballs. or something else. Tomorrow for breakfast might be pancakes, Sunday might be stuffed crepes, stuffed with<b> whipped cream </font></b>cheese, a touch of cherry pie filling, and bananas. I make crepes every few months but generally eat them with pure maple syrup, seldom stuffed. Once a year I'll make crepes and turn them into blintzes with a fresh homemade strawberry or blueberry sauce.
