How I come up with recipe ideas


Some wonder how I come up with recipe ideas. I've been told "You must watch the Food Network". No. I don't.

Tonight I made a cookie. I wanted to use some coconut as I had a little flaked coconut still in the bag in the freezer, plus I had a small amount of nuts in a bag. I don't like to keep food around. I like to move the food from the refrig, freezer, and cabinets. Therefore, some of my ideas come from the food I have on hand, what has been there the longest, what has been opened.

I hate it when people say I don't have anything in the house to cook. So I challenged some of my friends who have said that and cooked a very tasty meal for them, using what they didn't have in the freezer, refrig, and cabinets.

When I cook something, I think about what is the "regular" way of cooking it and then what can I do to improve it. With pesto, I toast the nuts first to bring out the flavors. With tonight's meal, I had some crushed tomatoes in a can open and then topped it with a thin slice of Asiago. Why a thin slice? Because it wasn't parmesan and I didn't want to take away from the taste of the pesto and the wine sauce. Too much cheese would not have complimented the other flavors, it would have been primary.

For the sweet potatoes, I had apples that I had bought and wanted to use up plus an open bottle of Sour Apple Schnapp's to add that extra zing. I thought if I made an apple pie in the pan, I could add that to the sweet potatoes.

For dessert, I made coconut cookies which gave me idea for another dessert dish. Using the same recipe, adding just a touch more flour and baking soda, I could puff up the cookies into a heavy cake, make it in individual baking dishes, then when done, chop up some strawberries for the top of it, a strawberry coconut shortcake. Then for a topping, whip up some heavy cream, add some powdered sugar, and for flavoring, a touch of Malibu Rum (coconut flavored rum). Dollup this on top of the strawberries, sprinkle some granulated sugar on top of the whipped cream, then start up my propane torch and brown the<b> whipped cream. </font></b>Did I take this dish up a notch?
