I love smoked cheese too. Though not good for me, I like smoked processed cheese.

I like a good sharp cheddar cheese, but most of the Cheddar sold here is mild.

Given I grew up in a cheese-producing cheese, I was raised on cheese. Whenver I visited my parents, I even took cheese back to London where I lived to sell.

    It fact just the other day after a big lunch, I  decided  on fruit, a glass of wine and some stinky cheese for dinner. I found a chunk of  3 year old white Tillamook cheddar in the fridge that has made two round tripped to Mexico with us so I guess that makes it about 5 years old. For some reason I was asked to eat it on the balcony.
A glass of port, preferably vintage port, always goes well with cheese.
