EATING WITH THE ENEMY

This is my ritual and sacrificial offering to the eight virtual symposium on the theme of food - see Participants List For The Eighth Virtual Symposium Food for symposium contributions - organised by the symposium’s cult leader, humorguaranteed1!

My worst enemy, as a so-called peace offering, invited me over for dinner.

Despite unfounded fears that my food would be poisoned, my enemy decided to serve me the worst three-course meal I can ever imagine eating, all washed down with the two worst drinks I can imagine drinking.

After my enemy said grace, I had to nibble on crudités without dips for starters. All the raw vegetables were pieces of celery sticks, plus green, red and yellow peppers. It is an urban myth that you use more calories eating a celery stick than you ingest. On average, a celery stick contains 10 calories and only 2 calories are needed to eat this dreadful vegetable.

For the main course, my enemy served roast pork with artichokes, aubergines, courgettes and fennel, plus apple sauce. I hate fatty meats even though I know fat makes for a better cooked meat. And what is the point of a courgette? Also I don’t like mixing sweet and savoury foods on the same plate; apples are for apple pies!

For desserts (or pudding for the less posh), my friend made a cheesecake. Cheesecake is about the only pudding I don’t like eating. You can’t have a sweet dessert made from cheese!

This three-course meal was all washed down by beetroot juice. I know beetroot juice is healthy but a line has to be drawn somewhere for the sake of taste.

During the meal, my enemy cracked open a bottle of retsina to toast our new-found friendship. Retsina is a Greek wine flavoured with pine resin. I love most wines, but retsina is disgusting. Pine resin is something that’s used in toilet cleaners!

Because of my enemy’s offer of friendship with this meal, I felt obliged to return the favour by cooking my enemy a meal. I decided to serve a meal I love but which most people would hate.

The meal consisted of a fish soup for starters, cauliflower cheese for the main course, and bread and butter pudding with cold custard for the dessert. The meal was all washed down with copious amounts of tomato juice and rosé wine.

Cauliflower cheese is one of my signature dishes; in fact it’s my only signature dish I can make. The key to cauliflower cheese is the roux sauce, which many people have problems making.

What would be the worst and best three-course meal you could eat?
And what would be the best and worst drinks to have with a meal?
Can you make a roux sauce?

As an update, my worst enemy is still my worst enemy despite our two dinner dates!

Consider me as a friend : I love cauliflowers, raw with a dip or cooked you way.
Not only can I make a roux, but several, white, blond and, more difficult, brown.

My GF says her worst starter would be oysters, one of my favorites,
main course liver which I'm found of, dessert a Forêt Noire which I dislike too.
We both dig the tourteau fromager as sweets - hurray for all cheeses !

Spunky, this is hilarious beginning with the title and continuing through the dessert!
Those meals were certainly aggressive, hold the passive! Are you sure about that peace offering business? I have broken bread with mine enemies but even we weren't that mean to each other- we declared a momentary truce and didn't even snipe at each other during the meals.

What would be the worst and best three-course meal you could eat?
I think you did a fair job of describing two of them!

And what would be the best and worst drinks to have with a meal?
Best- beer- a sweet one like Watney's Red. Worst- damn near ANY vegetable juice.

Can you make a roux sauce?
I have made one- I don't think it was very good.

The best....pate to start, leg of lamb with all the trimmings and a raspberry pavlova. yum yum.

Best drink.....a bottle of Merlot and the worst...any sort of lager!!!

Depending on the guest, my menu would depend on them and my ulterior motives. And, I can make a roux. Easy peasy.

Wow! Food as weapon! I have a great deal of difficulty sitting across a dining table with anyone I don't like (I seriously don't enjoy it), so I give you credit for attempting this...

I don't have a problem with fresh vegetables. Red peppers are great on their own, but yes, many are enhanced with an interesting dip. Fatty meat can be trimmed, but I'm not a huge fan of fennel or sweet with savory, so we agree... cheesecake can be wonderful, so I'm afraid we can't agree there, unless the cheesecake was bad.

Now, your meal... I've had some wonderful fish soups, especially those which are heavily influenced by saffron, but I don't tend to like 'em overly fishy, so I'd need more details. The cauliflower cheese sounds delicious -- and yes, the ability to make a good roux is an undervalued skill.

Butter pudding with cold custard? I have no frame of reference for this, but my instinct, without having any idea of how it tastes, would be to offer a crispy cinnamon sugar cookie on the side.

Best and worst meals? Hm. Brunch is different than dinner is different than lunch... how's this: I'll offer a decent mid-day meal for May, and see what folks think:

Best: Cannolini bean/tuna/olive/basil salad, followed by a mushroom/cheese/egg souffle. Dessert would be a high-quality vanilla ice cream covered with a strawberry balasamic reduction. All accompanied by piping hot coffee and/or mimosas.

Worse: Grilled octopus salad followed by any sort of meat glazed in stewed fruit. Dessert... it's hard to come up with a really bad dessert, so how about overly dry and crumbly cake with a buttercream icing (I prefer fondant)?

Whew!

What would be the worst and best three-course meal you could eat?

The worst would be: Onion soup (I can't stand the texture of a boiled onion!), followed by a fatty, greasy, messy entree, and cookies of any kind.

The best is Bouillabaisse, lamb chops with tangy mint sauce and creme-brulee.

And what would be the best and worst drinks to have with a meal?

The best would be nice wine appropriate to a dish. The worst - any kind of beer.

Can you make a roux sauce? Yes, I can.

Both meals seems equally good. I happen to love beet juice, so none of that would have bothered me. I equally love fish.
Ah, well, this enemy must have known what you hated and put it all in one meal.

Best 3 course meal? Citrus salad with wild greens, a flash grilled Ahi completely raw in the middle, a raspberry sorbet at the end.
Worst? A salad made of iceberg lettuce with bleu cheese dressing and croutons, Blutwurst, Drippy custard that is undercooked.
Best drink? A nice Italian Barrolo, with a great pasta with red sauce with meat.
Worst drink? Clam juice by itself.
Can you cook a roux? Yes, I can and have in the past. Maybe this next week, I will again!
Great post,
Kk

What would be the worst and best three-course meal you could eat?
The best...veal chops lightly browned with onions and balsamic vinegar served with roasted asparagus with lemon and dill sauce and potatoes au gratin with truffle oil. The worst....all vegetarian. I love vegetables but not as three course meal!

And what would be the best and worst drinks to have with a meal?
The best...water and your favorite wine (makes no difference in types). The worst-- anything that hinders the flavors of the meal.....Beet juice or Smoothie types drinks come to mind.

Can you make a roux sauce?
Yes...I can it blonde or coffee color...depending on the sauce I make!

Cauliflower cheese is amazing. When making the roux sauce, put a big teaspoonful of English mustard in with the butter, milk and cheese. The dish then has an amazing kick!

I like liver and Black Forest cake but not oysters. Texture means more than taste when I eat. My sense of taste and smell is not that good.
And I love cheeses!

I'm afraid the enemy bit of this post was imaginary. I am a bit of a Walter Mitty in blogland. Online gives you these possibilities!
Making a roux sauce is all about stirring, constant stirring, and go careful on the milk! It's best to go from thick to thin; you can't go from thin to thick unless you add loads of tasteless cornflour!
