A SOUFFLÉ ANYONE?



The best dish I’ve ever eaten out (or in) is a twice baked cheese soufflé served at Langar Hall in Nottinghamshire. I know soufflé is very difficult to make, but here’s the recipe straight from the hotel’s website:

Twice Baked Cheese Souffle Recipe
½ pint hot milk, 2oz flour, 2oz butter, 2oz strong cheddar cheese
4 eggs separated. Salt & pepper, touch of nutmeg, a little mustard. Double cream.
Melt the butter over a slow heat, mix in the flour & cook 2-3 minutes.
Gradually add the hot milk to make a roux or smooth think sauce.
Add the cheese, salt, pepper, nutmeg & mustard to taste. Cook it to thicken.
Add the egg yolks, mix well before folding in the firmly whisked egg whites.
Put the mixture in well buttered ramekin dishes, leaving space for the mixture to rise.
Place the dishes in a deep baking dish of warm water to come half way up the ramekins.
Bake in a hot oven 180 degrees for 12 minutes until the top looks gold.
Remove from the oven and allow to cool.
You may leave them overnight in the fridge until you are ready to serve them.
Turn the cold soufflé out of the ramekin, upside down, on to the heat proof plates you will serve them from. Pour over a good tablespoon of double cream and sprinkle generously with grated cheddar. Place into a hot oven 180 degrees for 7-10 minutes. The soufflé will rise again.
Serve immediately.

I’m not on a retainer from the hotel!

Provided Scotland rejects independence next week, Langar Hall will be the venue for the wedding of the next Prime Minister of the UK, Ed Miliband, and his partner, Justine Thornton. They got married there in May 2011 - see below.

Yes I can make a souffle....I am a good cook.

The best meal I ever had was a starter of pate followed by venison, baby potatoes and steamed veg and finished off with the most delicious baked pear I have ever tasted with a ginger ice cream.

No real thoughts on Scotland's independence.

2. Oooohhhhhh, too many to mention.
3. As long as we have the queen and sterling it's not a vote for independence, it remains a vote for some idiot's egotistical folly, one that we can ill afford, a disaster for the whole of the UK.

Should Scotland vote for independence? I think they should stay with England. I think just like it was when Quebec wanted to leave Canada it would have turned out really bad.. hugsssssss V

I have never attempted soufflé but I can make a wonderful quiche.

I do enjoy them occasionally. The best dish I have had out...that is a tough one...(minutes pass while my memory goes for a tasteful stroll) nope, I can not name the best because I have had so many in so many places.
It is an interesting idea, Scotland voting independence...What would become of Balmoral? LOL

There is a difference between a good BJ and a bad BJ.

I really recommend that souffle recipe.
Scotland can afford to go independent, but whether it'll prosper as much on its own than being in the UK, I'm not so sure.

Quebec and Scotland have many things in common. I very much hope Scotland doesn't vote for independence.

    I had a phenomenal Steak Diane in Kings Cross many years ago.

    It's their future and not for me to say, I just hope for the best long-term outcome for them.
This soufflé recipe is brilliant. I haven't tried it because I'm a useless cook. I hope you'll try and make a soufflé.

Scotland still wants the Queen as the head of state if it becomes independent, so Balmoral can still be the Queen's holiday home.
